Our Favorite Homemade Waffles

Hmmm, we love waffles!!!! We don’t have them very often (my doctor told me that we need to start the day with protein) but everyone once in a while, I will cook some up for us! I did that this morning!

Here is my recipe:

Whole Wheat Waffles

2 Cups of Whole Wheat Flour
1/2 cup of Milled Flax Seed
3 Tablespoons of sugar
1 Tablespoon of baking powder
1 teaspoon of salt
2 cups of milk
1/3 cup of olive oil
2 eggs

1. Put the flour, flax see, sugar, baking powder and salt in a large mixing bowl and mix thoroughly.
2. Add milk, oil an eggs. Mix well. The mixture should be a bit runny but if it isn’t add more milk and mix until it is not thick/gooey.
3. Use about 1/3 cup for each waffle (depending on the size of your waffle maker).
4. Cook for 2.5 minutes for soft waffles and for about 3.5 minutes for crunchy waffles.

If you don’t have a waffle maker, it is a good investment. I bought mine for about $20 and I love it! It is actually a Waffle Stix machine – you can have waffles or you can break it into three waffle sticks (and they are great for dunking in syrup!).
